- 2 large russet potatoes (or frozen fries)
- 2 tbsp truffle oil
- ¼ cup freshly grated Parmesan cheese
- 1 tbsp finely chopped parsley
- ½ tsp salt (to taste)
- ½ tsp black pepper
- 1 clove garlic, minced (optional)
- Cooking oil (for frying or baking)
- Aioli or truffle mayo (for dipping, optional)
Instructions
- Preheat oven to 425°F (or heat oil in a fryer to 350°F if deep frying).
- Cut potatoes into thin fries and soak in cold water for 30 minutes to remove excess starch.
- Drain and pat dry thoroughly before frying or baking.
- If baking, toss fries with a little oil and spread evenly on a baking sheet. Bake for 20-25 minutes, flipping halfway.
- If frying, cook fries in hot oil for 3-4 minutes until golden brown, then drain on paper towels.
- While fries are hot, toss with truffle oil, Parmesan, parsley, salt, black pepper, and minced garlic (if using).
- Serve immediately with aioli or truffle mayo on the side.
