Indulgent, crispy, and full of umami, these Truffle Fries are a restaurant-quality side dish that’s easy to make at home. Perfectly golden fries tossed in truffle oil, Parmesan, and fresh herbs.

Ingredients

  • 2 large russet potatoes (or frozen fries)
  • 2 tbsp truffle oil
  • ¼ cup freshly grated Parmesan cheese
  • 1 tbsp finely chopped parsley
  • ½ tsp salt (to taste)
  • ½ tsp black pepper
  • 1 clove garlic, minced (optional)
  • Cooking oil (for frying or baking)
  • Aioli or truffle mayo (for dipping, optional)

Instructions

  1. Preheat oven to 425°F (or heat oil in a fryer to 350°F if deep frying).
  2. Cut potatoes into thin fries and soak in cold water for 30 minutes to remove excess starch.
  3. Drain and pat dry thoroughly before frying or baking.
  4. If baking, toss fries with a little oil and spread evenly on a baking sheet. Bake for 20-25 minutes, flipping halfway.
  5. If frying, cook fries in hot oil for 3-4 minutes until golden brown, then drain on paper towels.
  6. While fries are hot, toss with truffle oil, Parmesan, parsley, salt, black pepper, and minced garlic (if using).
  7. Serve immediately with aioli or truffle mayo on the side.
