- 1 ½ tsp (9g) fine sea salt
- 1 tsp (4g) sugar
- 1 tsp (3g) instant yeast (or 1 ¼ tsp active dry yeast)
- 1 ⅓ cups (315g) cold water
- 1 tbsp (14g) olive oil
For the Sauce
- 1 (28oz) can of whole San Marzano tomatoes
- 1 tsp salt
- 1 tsp sugar (optional, if tomatoes are too acidic)
- 1 tsp dried oregano
- ½ tsp garlic powder
- 1 tbsp olive oil
- Pinch of red pepper flakes (optional)
For the Toppings
- Whole Milk Low-Moisture Mozzarella (Polly-O, Boar's Head, or Grande recommended)
- Pecorino Romano or Parmesan (grated, for finishing)
- High-quality pepperoni (optional)
- Fresh basil leaves (optional)
Method
Step 1: Make the Dough
- Mix the dry ingredients in a large bowl (flour, salt, sugar, yeast).
- Slowly add cold water and mix until a shaggy dough forms.
- Knead for 3-5 minutes until dough comes together but is still rough.
- Cover and let rest for 30 minutes (autolyse for better texture).
- Add olive oil and knead for 3-5 more minutes until smooth.
- Divide into 2 balls, coat lightly with olive oil, and place in oiled containers.
- Cold ferment in the fridge for 24-72 hours for optimal flavor.
- On bake day, take the dough out 2 hours before baking to reach room temp.
Step 2: Make the Sauce
- Blend tomatoes lightly (leave some texture).
- Mix in salt, oregano, garlic, olive oil, and sugar if needed.
- Let sit for 30 minutes to develop flavor. Use raw on pizza.
Step 3: Bake the Pizza
- Preheat your oven to 500-550°F with a baking steel or stone inside for at least 45 minutes.
- Stretch dough gently into a 14" round (leave an edge for the crust).
- Place on a floured pizza peel or parchment paper.
- Spread a thin layer of sauce (¼ cup max).
- Add shredded mozzarella evenly.
- Transfer to the oven using a peel (or slide parchment onto the stone).
- Bake for 7-10 minutes (until crust is golden & cheese bubbles).
- Optional: Broil for 30 seconds for more browning.
- Finish with Pecorino and a drizzle of olive oil.
- Slice into large foldable slices and enjoy!
